Anyone have any High Protein / Low Fat Recipes?

I wish I had kept some of my mother's crock pot recipes, but there definitely a good kitchen product. The main thing we used ours for was stews, red meats, and chicken. mainly the recipe's you'll find are heavily beef and cream based stews.

CHILI!!!!!! There are million and one variation
The recipes are weird for the crock pot as the size of the pot is a key factor.
So back to it. 1 cup nice lean meat in chunks (beef, chicken, etc..) 1 cup of dry beans ANY kind you like 1/4 cup chopped celery 1/4 cup chopped onions 1/4 cup chopped tomato a few clove of garlic crushed 1 tbsp of chili powder 1/4 tsp salt 1 tbsp black pepper (I prefer combination of cayenne pepper, chipotle, and black pepper) 1/2 tsp ground clove 2 cup of liquid. Either water, stock, tomato juice 2 chopped jalapeno peppers
My secret ingredient two strips of farmers bacon chopped (these are fairly think 1/4" and heavily smoked) you can keep them whole if you want to remove them and not eat them.
Cook for 6+ hours on low (I do it over night). Depending on the beans you may need to ad more liquid, presoak them or reduce the liquid. If you like a thicker chili add tomato paste to thicken.
The spices are to my taste you may need to experiment some.

But whats the nutritional value? & what would be considered a portion size? Yes i'm new to acctualy watching what i eat instead of eating 3 skinless chicken breasts and a cup or white rice in a 4 hour period.
Just trying to prepare myself for martial arts training once i get the cash and time to invest into it to further enhance my health and shape.

As with any meal simply add all the ingredient numbers together then you can divide by portion. Meain if the chili was a total of 2000 cals and you want only 200 cal divide the entire pot 10 time to get the portion. Then you divide the protien total by 10 the fat total by ten etc...
This is the easiest method I found.

I actually just bought a crock pot and I'm really excited to break it in. I know we have some family recipes that are generations old that are written down somewhere. I'll share them once I find them!
Nothing better than a bowl of stew or chili during these cold months, stuff in a can just doesn't cut it after you have a nice homemade stew.

T-rex forgot to mention, what about making [beef/turkey/chicken] stock? It's probably the best thing a crock pot can do besides stews and sauces. I'm planning on making a recipe for making stock fairly soon with pictures to post on here.
